One of my very best and dearest friends to this day grew up with a mother who believed in whole body health waaaaaaaaaaay before it became a thing. So as a kid, her mom made her a lot of green juices. She told me a story once about how her mom went to make her a green juice and she just busted out crying. Her mom says "well, we'll add an apple to it." She told me she cried, "IT'S JUST MORE JUICE!"
1st of all: Her mom is AMAZING. Just saying.
2nd of all: The tagline "IT'S JUST MORE JUICE!" still cracks me up to this day.
Which is what I think every time I make this juice-like-smoothie-like-whatever you call it.
Going back to my Blueberry Basil Smoothie recipe (which you totally read, right? RIGHT?!), I mentioned I lived in the desert and you could get fresh juice pretty much wherever and whenever you wanted. I was especially enamored with the green juice. I don't like stuff too sweet, so it fit my vibe. Greens, a little apple, some celery, lemon, etc., etc., and I used to top it off with a little cayenne to match that ginger bite and I was off to the races.
But again....expensive and when I moved back to the East Coast, you finding fresh juice wherever you wanted was kind of not a thing. Plus, since I never figured out how to make V-8 when I was ten, I thought I was due.
A couple of things to note:
Since this is made in a blender and not a juicer, this is going to be THICK. You may do well with straining out the pulp using a fine-mesh sieve or a coffee filter in a fine-mesh sieve. Honestly, I don't strain out the pulp for one serving. The fiber is super beneficial.
Blender-wise, a high-powered blender is best, although I have made this in both a high-powered and a regular blender. If using a regular blender, you may want to soak your ingredients in the blender jar for a few minutes before hitting the "High" button.
The below recipe is also TOTALLY customizable. I legit make green juices out of what I see in my fridge. So if you don't have the ingredient, leave it out and do what you want.
Blender-Style Green Juice
1 1/2 cups water (start with 1 cup; add 1/2 cup more if the juice is way too thick)
1 cup greens (spinach, which is the easiest, kale, arugula, a 1/2 cup of each, a cup of mixed salad greens...legit...you get the idea)
1/2 of a large carrot, peeled and chopped
1/2 of a large stalk of celery, chopped
1/4 of an English (seedless) cucumber, chopped
1 small green apple, cut into chunks
1 tablespoon fresh-squeezed lemon juice
1 tiny pinch of salt
1/8 teaspoon cayenne pepper (OPTIONAL)
1/4 teaspoon ground ginger
1/2 of a plum or small vine-ripe tomato, chopped (again, OPTIONAL)
Make It:
Blend until smooth.
Strain pulp through a fine mesh sieve, a fine mesh sieve lined with a coffee filter, or just drink all that fibery goodness.
