Pistachio Smoothie: January 28th.

Q: What's your favorite boxed pudding?

A: If you said "Pistachio!", then we're friends for life.

There was just something about that magical green color. A color that, let's be honest, definitely DOES NOT exist in nature.

But oh, what a flavor.

I remember my mom made a pistachio cake when I was a kid. This wasn't like a professional baker's type version. Oh, no. It was the ultimate "throw it together and see if it works out" version. Boxed yellow cake mix, a box of pistachio pudding powder...there was some whipped topping situation in there...and at the end of it all was this wonderful green cake that was so much more than chocolate or vanilla. It was pistachio. It felt fancy.

Years later, one of my very dearest friends made one as a dessert, not knowing my obsession with pistachio pudding and the subsequent cake it produced. It was like 'Pistachio Cake: Redux'. I ate a lot of it, as one is wont to do when there's a pistachio cake laying around.

But one cannot live on pistachio cake alone. Namely because my blood would be replaced with pure sugar, and I'm already sweet enough. Womp womp see what I did there.

Anyway, I was recently traveling weekly for work. What I usually do when I land is go to the grocery store and stock up on a week's worth of breakfasts, like yogurt, nuts, granola, fruit, put them in the hotel fridge, and viola. I bulk-bought pistachios and when I was ready to go back to the airport, I realized that I was NOT leaving my leftover pistachios behind.

But what to do with them??

I started tinkering, and out of it came this pistachio smoothie. Literally one of my all-time favorite smoothies, it tastes just like the cake I remember, except without all the Day-Glo.

Not that there's anything wrong with that.


Pistachio Smoothie

  • 1 cup milk of choice

  • 1 serving protein powder of choice (using ground hemp seed powder really helps with the green color here)

  • 1 pitted Medjool date or 2 Deglet dates

  • 2 tablespoons pistachios

  • 1/4 cup fresh or frozen spinach (really, really helps with the green color)

  • 1/4 of a large frozen banana

  • 1/4 teaspoon vanilla extract (always optional)

  • 1/4 teaspoon almond extract (always optional)

  • Tiny pinch of salt


Make the thing:

  • Ingredients.

  • Blender.

  • Blend until smooth.

  • Hug your mom.
