No, really. Have you ever started cooking something and were just sort of 'wowed' by the color profile of the ingredients? Well, that happened over here in SPG Land*.
*Disclaimer: SPG Land may only exist in my head. But it's BEAUTIFUL.
Anyway, eggs. Les Oeufs in French. Unsung heroes of the protein world. Key character in many baking plays. Originators of cholesterol controversy. Easy to put together for any meal of the day. In this particular iteration, I stared into my fridge and wondered what, oh what should I make for lunch. And there they were. Just hanging. Saying 'hello, did you call me?' Yes, yes I did, little egg. May I make a sandwich out of you? 'Sure!' Thanks.
So that's what happened. One of the easiest egg recipes on the planet. I grabbed what I always have in my fridge: any number of unlimited veg, the eggs, some bread, cheese. Done. I got no further than Step 1 (Veg Sauté) and had to stop. The colors were so vibrant that I decided to take some pics and share step by step. So you, too, can make your own thing of beauty, and possibly the easiest thing you do all day. Possibly.
STEP 1: Sauté Vegetables. We're talking any kind here; that's the whole point of using up whatever you have on hand. In this mix, I took 1 teaspoon avocado oil to a 2 cup mixture of leeks, mushrooms, tomatoes, broccoli, zucchini, and chopped onion. Use medium heat and cook until just tender, about 5 minutes.
STEP 2: Get the Eggs. There are 2 steps to step 2 for the 2 eggs I used, actually. Not only do you want to crack the eggs in a bowl (that's step 1); you want to season the eggs. Just trust me on this one. Add 2 tablespoons water or broth to your eggs in the bowl (I used vegetable broth), and then sprinkle in any seasonings you like. Depicted are a handsome group I tend to enjoy, but you're not me so you be you. Just add a lot of chives. Like, a LOT. Then, whip 'em up with a fork. There you go!
STEP 3: Cook Said Eggs. There are no pictorials here. Add the eggs to the heated vegetables and scramble until 'just' set; about 5 minutes. There will still a tiny bit of liquid. That's when you take the eggs off heat and allow them to finish cooking in the hot pan. This prevents the dreaded "tough egg". If using cheese, now is the time to sprinkle over top so it melts. I used 2 tablespoons shredded Swiss cheese in this scenario. Do what makes you happy.
STEP 4: Oh wait, the bread! Don't forget the whole point of a sandwich is the bread. Toast 2 slices. This is sourdough. Hi, sourdough! This is an 'open faced' affair.
STEP 5: Top bread with cooked eggs and... Notice that you're missing something.....what is it....HOT SAUCE THAT'S RIGHT. Cholula. The only hot sauce that exists. There is no room on the debate stage for this fact.
STEP 6: Eat it. Repeat if necessary.
