Though I eat a mostly plant-based diet, I do rely on some animal protein. I tried a vegan diet at one point in my life; it didn't work for me. But that's the awesome thing about being different people. We discover what works for our particular bodies and we get to pick and choose what makes sense for us, yeah?
That said, when I make a dessert, I head towards vegan desserts. When I was eating a vegan diet, I made a lot of vegan desserts and they were phenomenal. Plus, while they may use high-in-fat ingredients (come on here, we're still talking dessert so go for it), they weren't as heavy as their traditional counterparts.
Enter chocolate mousse, another one of my favorite desserts (next to cheesecake, of course).
Eating a no-animal product diet, how was I to find a replacement for one of my favorite desserts?
Why cashews, of course. Unless you're allergic to nuts, then steer clear, but you already knew that.
I found a lot of recipes that use cashews or avocado as a creamy base for a lot of vegan cooking, and for good reason.
So every now and then, when I want a chocolate mousse experience without all the heavy cream, I make a cashew-based chocolate mousse. Still rich, and a little goes a long way.
This smoothie is based on that concept, and guess what--it's even lighter than mousse! WHAAAAT IKR?!?

Chocolate Cashew Smoothie
1 cup milk of choice
1 serving protein powder of choice
1-2 tablespoons raw cacao or cocoa powder
1 tablespoon cashew butter OR 2 tablespoons raw cashews
1-2 pitted Medjool dates or 2-4 Deglet dates (your choice)
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract (OPTIONAL)
1/4 teaspoon almond extract (OPTIONAL)
1/4 cup fresh or frozen spinach (OPTIONAL)
Make It:
Place all ingredients in a blender.
Blend the ingredients in the blender.
