Carrots. Is there anything they can't do? They're little orange wonders. Full of Vitamin A. Full of fiber. Your grandma tells you they help with night vision, which means YOU WILL GLOW IN THE DARK.

Ok that last part is definitely not true, and it's not just night vision, either. Carrots help all vision, thanks to the Vitamin A.

PLUS, Vitamin A=cell turnover=retinol='fountain of youth'=I am not a dermatologist, check with your local dermatologist on the benefits of retinoids for your skin.

All I'm saying here is, the humble carrot does so much good, AND it's naturally sweet, which lends a sweet component to a wide array of dishes: soups, side dishes, cakes....

Although that last one can be super polarizing. In my years here on the Earth, I have seen opinions on whether you love or hate carrot cake break whole families apart.

Ok, that's not true either, but people do indeed remain very opinionated on their like or dislike of carrot cake. Some feel that, if chocolate isn't part of a dessert, why bother? (I feel that). Or even if carrot cake is in the 'enjoy' category, there are very strong opinions about how it's prepared: pineapple or no? Cream cheese frosting or buttercream? Raisins? Who puts raisins in ANYTHING?

I'm not going to act as the carrot cake authority here; as always in these posts, I just know what I like. My brother and I split carrot cake as a dessert at one restaurant we like to frequent, and it's perfect. Carrots, walnuts, spice, no raisins, yes cream cheese frosting, and dense as a brick but so good.

So while I can't repair broken carrot cake-inspired relationship rifts, I CAN replicate an enjoyable carrot cake experience for the rest of us.

Carrot Cake Smoothie

  • 1 cup milk of choice

  • 1 serving protein powder of choice

  • 1/2 of a large carrot, peeled and chopped

  • 1-2 pitted Medjool dates or 2-4 Deglet dates (sweetness level is your choice)

  • 1 tablespoon walnuts

  • 1 tablespoon Greek-style yogurt (or yogurt of choice)

  • 1 tablespoon oats

  • 1/2 teaspoon ground cinnamon

  • 1/8 teaspoon ground ginger

  • 1/8 teaspoon ground cloves

  • Tiny pinch of salt

  • 1/4 teaspoon vanilla extract (OPTIONAL)


Make It:

  • Blend until smooth.

  • Enjoy it.

  • Mend fences.
